Copalli Conservation Cask is a five-year-old organic aged rum from Copal Tree Distillery in the Toledo District of southern Belize, made in an agricole style from fresh-pressed sugar cane juice rather than molasses.
The heirloom Noble Cane is grown on Copal Tree Farm, fermented with non-GMO yeast and rainwater, distilled in copper pot stills and aged in American oak ex-bourbon barrels. Profits from the enterprise go to educational and environmental grants.
The nose shows brown sugar, caramel and a drying leather note. On the palate come dried dates, fig, panela, cocoa, toffee, mango, grilled pineapple and baking spice, ending with orange peel, cayenne and a little smoke.
