Corbin Cash Blended American Whiskey is made on the Souza family farm in Atwater, California, from 80% sweet potato spirit and 20% Merced rye whiskey. It is bottled at 45% ABV in a 750ml bottle.
The family has grown sweet potatoes for four generations, and the heirloom Merced rye is sown as a cover crop between harvests. Each spirit is aged separately for up to four years in custom-charred American white oak, then the two are blended.
Candied yam sweetness and toffee come first, followed by cocoa and charred oak, with a faint sourdough tang from the rye. The finish is mellow and slightly dry, with a whisper of spice.
