Corbin Cash Sour Mash Bourbon Whiskey (75cl, 53%)

Corbin Cash Sour Mash Bourbon is a barrel-proof bourbon from Corbin Cash Distillery in Atwater, California, bottled at 53% in a 75cl bottle. The mash bill is 70% corn, 25% rye and 5% malted barley, and the whiskey is aged for a minimum of 4 years. It is barrelled at a lower entry proof so that it can be released at barrel strength. Master distiller David John Souza makes it on the family farm in the San Joaquin Valley, and the distillery is named after his son, Corbin Cash Souza. Some spent mash is carried into each new batch. The nose is smoky, with vanilla and oak leading to warm apple and cinnamon. Caramel, vanilla and oak run through the palate.
