Dalmore 21 Year Old is a Highland single malt matured first in American white oak ex-bourbon casks, developing vanilla and honey notes. It then spends a finishing period in Gonzalez Byass casks that previously held 30-year-old Matusalem Oloroso sherry.
The nose combines Seville orange, bitter chocolate, coffee and vanilla. Sweet liquorice, dark forest fruits, roasted walnuts and marzipan follow on the palate, with peaches, ginseng, pear tarte tatin and blood orange on the finish.
