A Premier Cru Pinot Noir from the Aux Fourneaux vineyard east of Savigny, bordering Pernand-Vergelesse towards Aloxe-Corton. The name comes from ancient charcoal ovens found on the site, and the subsoil contains high concentrations of iron ore mixed with clay. Only the upper part of the vineyard is classified as Premier Cru, and the domaine's parcel is 0.30 hectares planted with 70-year-old vines.
Both fermentation and maturation take place over fourteen months in classic 228-litre Burgundy oak casks. The wine is concentrated and deep, with notes of small red and black berries, the classic velvet texture and long finish of Savigny-les-Beaune. With age it often gains tones of forest floor and leather.
It is suited to veal, pork, game birds and cheese.
