Domaine Mont Rose Rosé Côtes de Thongue

This is a French rosé from the Languedoc, made at Domaine Mont Rose in the Côtes de Thongue. Grenache (65%) and Syrah (10%) bring juice, fruit and immediacy, while Cabernet Sauvignon adds concentration and backbone. The three varieties are vinified separately. A short spell on the skins gives the pale rosé colour and good fruit and aroma extraction. The juice is then pressed and fermented cool, at 15 to 18°C, in steel tanks. Once blended, the wine rests on its lees in the same tanks for about three months. It suits fish soup, shellfish, sushi, grilled fish, poultry or a Provençal ratatouille, and works equally well at a picnic or a cold buffet.
