A single pot still Irish whiskey from Drumshanbo Distillery, in a 70cl bottle. The mash bill combines unmalted Irish barley with Irish Banna oats, and the whiskey is matured in a blend of ex-bourbon barrels and ex-Oloroso sherry casks.
The nose opens with vanilla, dried fruit, sweet baking spices and a little white pepper. The palate has soft toasted oak, crisp green apple and a rounded sherry richness, with creamy oats, fig and delicate spice. The finish is long and balanced, with dried fruits and warming wood spice.
