Edinburgh Gin Rhubarb & Ginger Liqueur

This is a rhubarb and ginger gin liqueur from Edinburgh Gin. It starts from the distillery's regular dry gin, which uses 14 botanicals including orange peel, lemongrass, lavender and mulberry, and is then infused with generous amounts of rhubarb and fresh ginger. It is pale pink in colour. The nose shows plenty of juniper, with ginger and rhubarb clearly present. The palate is fresh and juicy, with a spicy warmth from orange and ginger, red fruit and fir notes, and the finish is long and spicy. It can be served neat, with tonic or in cocktails.
