Wilhelm is a German single malt from Evermann, the whisky arm of the Bimmerle family firm in the Black Forest. It is made from German malted barley and distilled twice in Black Forest copper pot stills, then bottled at 42% in a 70cl bottle.
Its character comes from seven cask types that are vatted together: once-used bourbon, American oak, German oak, acacia, sweet wine, Oloroso sherry and chestnut. The toast level of each cask is chosen with care, and the strongly toasted acacia is used only in a smaller share. The whisky is dark amber in the glass.
The nose has candied fruit, fruit bread, brioche and nuts, with caramel and a little smoke. The palate is powerful, with dried fruit, caramel, honey and nougat against wood spice, and the finish is long, soft and warming.
