Hakata 12 Year Old is a Japanese single malt aged for a minimum of 12 years in sherry casks at the Hikari Distillery in Fukuoka, bottled at 42% ABV in a 70cl bottle. It is not chill-filtered.
The whisky is made from 100% barley, with a portion fermented using koji, and matured in traditional and open-air warehouses. Two more years in cask than the 10 year old bring a stronger umami character alongside more oak.
The nose offers bok choy, ground ginger, coffee bean and black forest gateau. On the palate come raisin, black cherry, soy sauce and plain chocolate, and the finish brings oak tannins, sweet tea and cola.
