Hakushu – 12 Year Old Single Malt (43%)

Hakushu 12 Year Old is a Japanese single malt from the Hakushu distillery, set in the forests of Mt. Kaikomagatake and owned by Suntory. It is bottled at 43% and was first released in 1994. The distillery was established in 1973. It draws on soft, granite-filtered mountain water and uses a variety of pot still shapes and cask types. The whisky is often called the forest whisky for its fresh, green, herbal character. Fresh-cut grass, green fruit and a hint of jasmine tea are described, with a subtle smokiness that stays behind the herbal and fruity notes.
