Hakushu 12 Year Old is a single malt from the Yamanashi prefecture of Japan, where the distillery sits in mountain forest in the Japanese Southern Alps. Founded in 1973 by Keizo Saji, it uses soft alpine water and a cool climate to mature whisky more slowly, giving a green, fresh character. It is made from 100% malted barley and bottled at 43% ABV.
It is a bright champagne gold. The nose is fresh and lively, with green apple, pear, basil, pine needles, fresh mint and a touch of vanilla. The palate is medium bodied and creamy, opening with kiwi, sweet pear and candied herbs before malty grain and gentle oak spice. The finish is clean, dry and crisp, with green tea and a very subtle hint of smoke.
