Hellyers Road Aurora Australis (70cl, 40%)

Aurora Australis is a single malt from Hellyers Road, made in the remote north-west of Tasmania. It is bottled at 40% in a 70cl bottle, without chill-filtration or added colouring. The name refers to the southern lights that can be seen from the distillery's location. With this bottling, Hellyers Road pays tribute to its home between fertile farmland and cool, temperate forest. The nose opens with crème brûlée and warm brioche, then shortbread, rich vanilla cream, and light notes of gingerbread and blossom. On the palate, juicy apricot and ripe peach meet velvety cream, with pineapple adding a bright note and the sweetness lingering. The finish is medium in length and sweet.
