Hibiki 17 Year Old is a Japanese blended whisky from Suntory, first introduced in 1989. It is made from selected malt and grain whiskies aged for at least 17 years in American oak, sherry casks and Mizunara oak.
Each cask type is described as adding something different. American oak brings vanilla sweetness and soft caramel, sherry casks add raisins, figs and dark chocolate, and Mizunara gives incense-like spice, sandalwood and a hint of coconut. Both copper pot stills and multi-column stills are used in its making.
The finish is long and satisfying, with a silky texture.
