A cask strength Kentucky straight bourbon from Hirsch, made in collaboration with the Hine Cognac house. It is the 2025 release in a series that began in 2022, bottled at 63.5% ABV (127 proof) in a 75cl bottle.
The bourbon was aged in new charred oak, then finished in 30-year-old Hine Cognac XO barrels in Bardstown, Kentucky. The mashbill is 72% corn, 13% rye and 15% barley. This year it was bottled as 10 single barrels, giving 4,146 bottles in all.
The nose is plum and rich baking spice. The palate brings caramel cherry, soft vanilla, mild cinnamon and muscat grape, with a rich mouthfeel. The finish has peach rings, cedar and fig, with gentle tannins.
