A blend of straight bourbons from Ironroot Republic of Denison, Texas. The base is the distillery's own Bloody Butcher Corn Bourbon, blended with selected bourbons from Kentucky and Indiana. The blend is then finished for up to a year in three wine casks: Pineau des Charentes, Sauternes and Rivesaltes. It is bottled at 53.5% ABV (107 proof) in a 75cl bottle.
The nose is rich cocoa, fermenting tobacco, stewed cherry and fig. Cocoa and tobacco lead on the palate, joined by a note of cajeta, a goat's milk caramel. The finish is long and sweet, with stewed cherry and fig lingering.
