Isle of Fionia Peated is a Danish single malt from Nyborg Destilleri, made with medium peat smoke at 35 ppm. It is bottled at 48%, a little higher than usual, to bring out the nuances of flavour.
The whisky was matured in two types of cask: first-fill bourbon casks from Jack Daniels and white oak STR wine casks. In STR, the staves are shaved by 5 millimetres on the inside, then toasted and re-charred. It is unfiltered, organic and has no added colour.
Sweet notes of Finnish liquorice, toffee, sea salt, ripe fruit, iodine and sweet campfire smoke are described on both nose and palate.
