Isle of Fionia Stilhed is an organic Danish single malt from Nyborg Destilleri, released in 2026 with an Oloroso cask finish. It was made entirely in the distillery's newer pot still, which came into use in 2017, after earlier distilling at Ørbæk.
The whisky was first matured in bourbon casks, then finished in Oloroso sherry casks. The bourbon casks give vanilla and soft oak, while the sherry adds dark and dried fruit and warm spices.
It is certified organic, non-chill-filtered and of natural colour, bottled at 46% in a 70cl bottle.
