La Fée Absinthe Verte is a French green absinthe with a modern outlook, created by George Rowley in 2008. Grand wormwood, fennel, star anise and peppermint form the botanical base, with Madagascan vanilla and cocoa folded in. A gentle maceration and distillation shape its aromatic character.
It pours a vivid lime colour. Herbal aniseed on the nose opens into vanilla, cocoa and lemon zest, and the finish is smooth and creamy, with sweetness, fennel and mint. It comes in a 70cl bottle at 40% vol.
