This is the 2023 release of the Macallan 25 Year Old Sherry Oak, a single malt bottled at 43% ABV. It matured for 25 years in first-fill European oak casks seasoned with Oloroso sherry from Jerez, and its deep mahogany colour is natural, with no colouring added.
The nose offers raisins, dried figs and dates, followed by dark chocolate, cinnamon, clove and a little orange peel. The palate is velvety, with plums and cherries, nutmeg and ginger, and touches of roasted almonds, honey and leather. The finish is very long, moving from raisin and caramel sweetness to warming spice, light wood smoke and a soft bitterness of dark cocoa.
