The Macallan Harmony Collection Rich Cacao is a single malt bottled at 44% in a 70cl bottle. It is made from a combination of American and European oak, and was created in collaboration with the pastry chef Jordi Roca of the three-Michelin-star restaurant El Celler de Can Roca.
It is part of a new annual series that brings whisky and chocolate together. To prepare it, Macallan whisky maker Polly Logan travelled to Girona in Spain, where she explored chocolate making and its flavour profiles at Casa Cacao, working with Roca and the master chocolatier Damien Allsop.
