The Sherry One is a peated Speyside single malt from Meikle Toir, 5 years old and bottled at 48% in a 70cl bottle. The bottle carries Billy Walker's signature.
The peat is mainland peat from St. Fergus, giving a phenol content of 35 PPM. Fermentation runs for 160 hours, which produces a fruit-forward spirit, and the whisky is aged in sherry oak.
On the nose it is cedarwood, cigar box, butterscotch and mocha, with orange peel, honey and plum jam. The palate brings dark chocolate, smoked honey, figs, treacle and burnt sugar, with puffs of peat smoke.
