Michel Couvreur Very V.J. Maturation Vintage 2012, 2015 and 2016 Jura Vin Jaune Barrels (70cl, 47%)

This is a malt whisky from Michel Couvreur, bottled at 47% ABV in a 70cl bottle. It marries Scottish distillates from the 2012, 2015 and 2016 vintages. The whisky matured in Jura vin jaune barrels from Stéphane Tissot. Vin jaune is made from the Savagnin grape and ages for years under a natural layer of yeast, which gives it an oxidative character with notes of fresh walnuts, almonds and spice. Michel Couvreur sources Scottish distillates and matures them in cellars in Burgundy. Here the vin jaune barrels take the place of the usual sherry cask.
