Novo Fogo Colibri Cachaça (42%)

Novo Fogo Colibri is an organic cachaça made from estate-grown sugar cane juice in Morretes, in southern Brazil. It is fermented for 18 hours with wild yeast and distilled in a copper pot still. Colibri means hummingbird in Portuguese. The spirit is moved back and forth over the years between repurposed oak barrels and amburana, or Brazilian teak, barrels. The oak brings vanilla and toffee, and the amburana adds cinnamon and chestnut, alongside banana and passion fruit. The nose is cinnamon and banana. The palate brings toffee and passion fruit, and the finish is snickerdoodle with chestnuts.
