Olmeca Altos Tequila Plata (40%)

A bright blanco tequila produced at Destilería Colonial de Jalisco in the Highlands of Jalisco, Mexico, from 100% Blue Weber agave. It was developed by master distiller Jesús Hernández in collaboration with internationally recognised bartenders. The agave is slow-roasted in brick ovens, with a portion crushed using a traditional volcanic stone tahona wheel. The fermented juice is double-distilled in copper pot stills and the tequila is bottled unaged. The nose leads with fresh roasted agave, supported by citrus zest, white pepper and subtle herbal notes. The palate is crisp and lively, with lime, sweet agave and gentle spice, plus mineral and grassy nuances. The finish is clean and peppery, with lingering agave sweetness and bright citrus lift.
