Ontake 2025 Sherry Cask is a Japanese single malt matured exclusively in rare first-fill ex-Solera Oloroso sherry casks, which previously held drinking sherry. It is made with the distillery's own cultivated yeast, two-row barley and local natural water. Ontake was established by Nishi Shuzo, a producer with over 180 years of distilling history. It stands about 400 metres above sea level, overlooking Kagoshima, Kinko Bay and the Sakurajima Volcano. This release has won Gold Medals at the World Whisky Masters 2025, the Asia World Spirits Competition 2025 and the Tokyo Whisky & Spirits Competition 2026.
