A 25-year-old Cognac from Paul Giraud, a family house in Grande Champagne, labelled in the XO class.
The wine is made from grapes at 8-10% alcohol and double distilled in two pot stills dating from 1950 and 1962, the first distillation done on the lees for added complexity. It then ages in Limousin oak at full strength, with roughly 30% new casks each year.
The nose is soft and delicate with sweet notes. The palate is well balanced and powerful, yet almost liqueur-soft, with exotic fruit, honey, pear and apricot. The finish is balanced and reflects the 25 years of ageing.
