Peallach is a peated single cask Tobermory single malt, distilled in 2015 and bottled in 2024 at 9 years old. It was matured in a bourbon barrel and bottled at 56.1% ABV by the independent bottler Malts of Scotland, with an outturn of 250 bottles.
The nose is salty and maritime, with plenty of iodine, a touch of bandage, cold fireplace and some smoke, alongside caramel, toffee, honey, apple pie and crème brûlée. The palate brings dry smoke, charred tarry ship's planking, stewed apple, tobacco and salted caramel. The finish is long, with salt, iodine and a good measure of charcoal smoke.
