Penelope Riviera is a four-grain bourbon bottled at 47% ABV in a 750ml bottle, part of the brand's Cooper Series of experimental cask finishes. It blends 8-year-old light whiskey with straight bourbon and is finished in Spanish rosé wine casks. It is non-chill-filtered.
It was distilled at Ross & Squibb in Lawrenceburg, Indiana, from a mashbill of 74% corn, 16% wheat, 7% rye and 3% malted barley.
The nose is apricot with floral notes, raspberry and strawberry. The palate moves from honeysuckle and peach to caramel, brown sugar and red currant. The finish is medium, with baking spices, vanilla, white pepper and seasoned oak.
