Penelope – Valencia Bourbon (75cl, 47.5%)

Penelope Valencia is a four-grain bourbon finished in Spanish Vino de Naranja casks, bottled at 47.5% ABV in a 75cl bottle. It belongs to Penelope's Cooper Series of experimental cask finishes. The mashbill is 74% corn, 7% rye, 16% wheat and 3% malted barley. After its initial maturation the bourbon spends a further 12 months in casks from the Sevilla region of southern Spain, which held white wine aged with Seville orange peel. It won Silver medals at the San Francisco World Spirits Competition in 2023 and 2024. The nose offers tangerine, candied orange peel, cinnamon, nutmeg, caramel and vanilla. The palate runs from orange cream to apricot, clove and a little leather. The finish is medium-long, with dried fruit, a wisp of smoke and bitter Seville peel.
