Providence 2021 is a Haitian pure single rum made from sugar cane, including the Cristalline variety grown by Michel Sajous in Saint-Michel de l'Attalaye. It was fermented with different yeasts and double distilled in a copper Müller still, then aged for three years in a mix of the distillery's own casks, bourbon casks and former Caroni casks. The result is a lively profile of roasted sugar cane and walnut with candied citrus, ginger and vanilla pudding, finishing soft, long and complex.
