Psenner Acquavite di Pere Williams (70cl, 40%)

This is a Williams pear eau de vie from Psenner in Trentino-Alto Adige, bottled at 40% abv. The pears are picked fully ripe so the aroma is at its most intense, then fermented slowly and distilled in copper stills heated in a water bath. It is crystal clear. The nose is intensely fruity, with clear pear, a note of the fresh garden and delicate floral touches. The palate opens soft, with balanced alcohol and a rich, pure pear flavour, and the finish is long and aromatic. It is served cold, as a digestif or in cocktails.
