Semele is a Montefalco Sagrantino Passito DOCG produced by Cesarini Sartori in Umbria from 100% Sagrantino grapes. The grapes are harvested by hand in the third decade of October and selected before vinification.
The wine is an intense, impenetrable ruby red, with aromas of blackberry jam, dried figs, dates and raisins, along with orange peel, baked apple, prune and balsamic nuances. On the palate it is soft, balanced and persistent, with notes of liquorice, blackberry, prune, raisin, dried fig, date, clove and cinnamon. Ageing involves steel, wood and glass, including 12 months in large casks and barriques.
It is served at 16-18 C and pairs with aged cheeses, biscuits, tarts and dark chocolate desserts.
