Sibirian Unicorn Secret Highlander 1997 Icewine Cask Finish (35cl, 55%)

A Highland single malt distilled in 1997 and bottled at 55% in a 35cl bottle, released as the Secret Highlander. After a long maturation in bourbon casks it was finished in an icewine cask, which gives a clearly defined, intense fruit character. It is non-chill-filtered and has no added colouring, and the colour is an intense golden yellow. The nose is dominated by fresh green apple, crisp and juicy, with fine honey, pale grapes and a gentle sweetness. On the palate, ripe sweet apple turns quickly to a tart, almost drying wood note, with a dense, coating texture. The finish is long, with apple throughout and honey sweetness fading in waves.
