Silkie, The Legendary Irish Whiskey (70cl, 46%)

Silkie is a blended Irish whiskey named after the seal-folk of Donegal's Atlantic coast. It combines grain and malt whiskeys from across Ireland, triple distilled in copper pot stills, and is bottled at 46% in a 70cl bottle without chill filtration. It is matured mainly in American oak barrels, with some components from former bourbon casks. The nose is fresh malt, citrus peel and green apple, with a touch of sea air and vanilla. The palate brings malty sweetness, honey, toasted grain, light caramel and a hint of oak spice. The finish is medium in length, warm, with a little sea salt and gentle biscuity sweetness.
