Sirius 31 Year Old is a Scottish blended malt from North Star Spirits, distilled in 1988 and bottled in 2019. It is bottled at 43.1% in a 70cl bottle.
The blend of single malts matured for 31 years in first-fill bourbon casks.
The nose is rich honey, vanilla custard and aged oak, with dried orchard fruit, cinnamon and a hint of the sea. The palate is velvety, with toffee, baked apple and caramelised orange peel, plus walnut, dark chocolate and gentle oak spice. The finish is long and warming, with butterscotch, toasted almonds, a little tobacco and a gentle oak dryness.
