A Scotch Malt Whisky Society single grain whisky, matured for eight years in first-fill bourbon and second-fill hogshead casks. Gastronomic Fusion is Batch 27 from the Society's clear glass Heresy small-batch range, bottled at 50% ABV in a 70cl bottle.
The nose suggests a croque monsieur made with Dijon mustard and béchamel. The palate is lightly smoked porridge oats with banana, cinnamon and brown sugar. With water, it moves to paella rice with artichokes, shrimps and sweet smoked paprika, then fried garlic mushrooms with lightly smoked salmon and lemon-zested crème fraîche.
