Suntory Yamazaki 12 Years Old (70cl, 43%)

A 12 year old Japanese single malt from the Yamazaki distillery, bottled at 43% in a 70cl bottle. It was matured in charred oak and brought to strength with Japanese spring water. It is made only from malted barley, mashed with soft water from the Ojira River and fermented with a distinctive yeast in wooden washbacks. The wash is distilled twice. Yamazaki was begun in 1923 by Suntory's founder, Shinjiro Torii, near Kyoto. It is described as having a golden amber hue and a mellow palate, with cherry blossom, clover, honey and anise, then toffee and spice in a lingering finish.
