This is Hakushu 12 Year Old, a single malt from Suntory's distillery on Mt. Kaikomagatake in Japan. The whisky is distilled in direct-fire pot stills and aged in small white oak casks for 12 years or longer.
It is a green, herbal and gently smoky malt, made with water filtered through granite by rain and snow.
The nose shows basil, pine needle and green apple. The palate has sweet pear, mint and kiwi. The finish brings green tea and a subtle smoke.
