The Irishman Cask Strength 2021 is the 2021 edition of Walsh Whiskey's annual limited-edition Irish whiskey, bottled at 54.8% in a 70cl bottle.
It is triple distilled in copper pot stills from malted and unmalted barley, then matured in first-fill American oak ex-Bourbon barrels. It is bottled at natural cask strength without chill filtration.
The nose combines rich vanilla, toasted oak, ripe orchard fruit, caramel and a little tropical fruit. The palate is full-bodied, with honey, baked apple, dark chocolate, winter spice and dried fruit over oak tannins. The finish is long and warming, with spice, toasted wood and sweet vanilla.
