The Singleton of Dufftown 21 Year Old Trinity Cask Harmony is a Speyside single malt bottled at 43% ABV in a 70cl bottle. It spent 21 years maturing in three types of cask: European oak ex-sherry, American oak ex-bourbon and rejuvenated oak.
Each cask type has its own part to play. The sherry casks bring depth and spice, the bourbon casks sweetness and smoothness, and the rejuvenated oak vibrancy and structure.
The nose shows honeyed malt, poached pear and candied orange peel with vanilla and soft oak spice. The palate is silky, with dried fruit, toffee, roasted nuts, creamy malt and a little cinnamon. The finish is long, with dark chocolate, fruitcake and mellow oak.
