Tomatin – 2011 Vintage Bourbon Cask Matured (Gordon & MacPhail Discovery) (43%)

This is a 2011 Tomatin, a Highland single malt bottled by Gordon & MacPhail for its Discovery range. It was matured entirely in bourbon casks and bottled at 43% ABV. Tomatin's spirit is fermented for 168 hours, a long period that gives a fresh, fruity new make. The nose combines lemon zest, tropical fruit and desiccated coconut, with honeydew melon and walnut developing. Dried pineapple, ripe green apple and rich honey lead the palate, with brown sugar and dried banana underneath. The finish is full, with lasting malted biscuit and charred oak.
