Valdecuevas Verdejo Cuvée

Valdecuevas Verdejo Cuvée is a white wine made from 100% Verdejo from some of the estate's oldest vines in the Pago de la Pardina vineyard, at 700-800 metres above sea level. The grapes undergo 12 hours of skin maceration before pressing, then ferment slowly with native yeasts in French oak barrels of 500 and 1,200 litres. The wine matures sur lie in the same barrels for three months with regular stirring, then is bottled after natural settling and stabilisation in large steel tanks, with at least two further months in bottle. Production is limited to 3,000-7,000 bottles. It is straw yellow with a greenish tint. The nose is elegant and complex, with aromatic nuances of ripe fruit and discreet smoked and spicy tones. The palate has good richness, structure and velour, matching dry, crisp and mineral tones. Serve with oysters, shellfish, fish, pasta, risotto and light meat.
