This is a sweet sherry from Valdespino, made from Pedro Ximénez grapes. The grapes are left to dry, then vinified and fortified, and aged by the traditional solera method for around 10 to 12 years.
It is intense mahogany in colour. The nose offers caramel, a touch of spice and dried figs. The palate is dense, sweet and enveloping, with hints of plum and cinnamon running into a long finish.
It works well with 80% dark chocolate, or on its own after dinner.
