Very Old Barton 100 Proof is a Kentucky straight bourbon from Barton Distillery in Bardstown, bottled at 50% ABV in a 750ml bottle.
It is made from a high-rye mashbill built on 75% corn, distilled in a column still and refined with a copper doubler. Fermentation takes place in outdoor stainless steel tanks that are open to the Kentucky seasons.
The nose brings vanilla bean, butterscotch and leather, with a trace of citrus zest. On the palate come caramel and nougat, then cinnamon and ginger. The finish is dry and warm, with wood tannins and a hint of tobacco leaf.
