Viñas de Oro Pisco Acholado is a Peruvian pisco from Bodegas Viñas de Oro in El Carmen, Chincha, in the Ica Valley. It is a blend of Quebranta and Italia grapes, bottled at 41% ABV in a 75cl bottle.
The grapes are harvested between February and April and fermented on natural yeast in steel tanks for 7 to 15 days. The spirit is distilled once in a copper alembic still, then rested for 10 to 12 months in stainless steel.
The nose is floral, with honeyed blossom and herbaceous citrus. The palate is soft and silky, with lemon, aloe, earthy spice and a hint of anise and vanilla. The finish is smooth and long, with fresh apple and pear. It suits a Pisco Sour, or can be served neat and lightly chilled.
