Viñas de Oro Pisco Quebranta is a 'puro' pisco from Bodegas Viñas de Oro in El Carmen, Chincha, in Peru's Ica Valley. It is made entirely from Quebranta, a non-aromatic grape, and bottled at 41% vol under Peru's Denomination of Origin.
The grapes are harvested between February and April and pressed, then fermented on natural yeast in steel tanks for 7 to 15 days. The spirit is distilled once in a copper alembic still and rests for about 10 to 12 months in stainless steel.
It is fruit-driven and earthy, with apple, green mango, dried fruit and toasted nuts on the nose and a touch of chocolate on the palate. The finish is punchy and spicy, with a nutty, faintly saline edge. It is the traditional choice for a Pisco Sour.
