Waterford Gaia 2.1 is an organic Irish single malt whiskey in a 70cl bottle at 50% ABV. It is the first organic Irish single malt from Waterford, made with organic barley from seven Irish farms, and it is part of the Arcadian Series. Maturation draws on four kinds of cask: ex-bourbon, virgin American oak, French oak and Vin Doux Naturel wine casks. The nose offers orange peel, cherries and dry spice. On the palate come brown sugar, milk chocolate and grapefruit, and the finish carries white pepper with a lingering fruity spice.
