Waterford The Cuvée is an Irish whisky from the distillery's Cuvées series, a grand assemblage of whisky made from barley grown on 31 different Irish farms. Four barley varieties went into it: Irina, Taberna, Overture and Propino.
It matured for 4 years, 5 months and 19 days in first-fill American oak, new oak, French oak and casks that held sweet wines, port and marsala. It was assembled on 23 April 2021 and bottled on 26 July 2021 at 50% ABV, with 40,000 bottles filled.
The nose brings red apples, fresh earth, bread crust, lavender and orange. The palate is peppery, with cloves, grapefruit, dark chocolate and cherry. The finish is peppery with an oily spice.
