Waterford Lakefield Edition 1.1 is an Irish whisky from the Single Farm Origin series, made from Irina barley grown on a single farm, Lakefield. The barley was harvested on 11 September 2016 and the spirit distilled in the ninth week of 2017. It matured for just under three years and eight months in a mix of first-fill American oak, new oak, French oak and casks that held sweet wines, port and marsala. It was bottled in February 2021 at 50% ABV, with 30,528 bottles filled. The nose brings warm vanilla custard, baked bread, red apples, milk chocolate and pine needles. The palate opens softly with cloves, then pepper, honeydew melon and pear. The finish is very long.
